Meet the heart and soul behind our catering company

Tracey Apoliona, a native Hawaiian from Moloka'i, brings over 20 years of hospitality experience to the table. Her journey in the culinary world has been marked by a decade of success with her previous venture, The Feeding Leaf. Tracey's food style is deeply rooted in 'plantation comfort food,' a tribute to her Hawaiian heritage. Known for her meticulous attention to detail, she adds a final touch of elegance to every dish with her exceptional plating skills.


Brightwell Youngstrom, hailing from Kosrae, FSM, has embraced Hawaii as his home for nearly 15 years. His culinary style is a unique fusion, blending the flavors he grew up with in Kosrae with the local tastes of Hawaii. Brightwell's flair for combining diverse cooking styles adds a distinctive twist to our offerings.


Together, Tracey and Brightwell form a dynamic partnership. Tracey, the 'brains' of the operation, brings her extensive knowledge and refined skills, while Bright, the 'braun', infuses strength and innovation into our culinary creations. United in their new venture at La'i Opua 2020, they are excited to give back to the community that has embraced them, sharing their passion for food and hospitality with every dish they serve.
